Our ghee is hand churned the Vedic way. At Happy Belly Foods we try to honour the antiquity of this food by keeping steadfastly to tradition in its making. We use only organic raw milk from cows who graze in herb rich green pastures to make our ghee.
Vedic ghee making harnesses the energies of microbes in the fermentation of milk and further the separation of butter and buttermilk is achieved through the ‘bilona’ churning process. The Vedic mythology of life on Earth itself is a result of a similar churning of ocean waters . All manifestation the creative output of the dance between two equal and opposing forces !
We use a traditional wooden ‘charni’ to draw butter out of creamy curds . The rhythmic clockwise and anti clockwise movement of the ‘charni’ creates vortices which separates the microbially recycled milk into butter and buttermilk.. The collected butter is then very gently clarified into golden ghee.
Our ghee is rich in conjugated linoleic acid (CLA), omega 3 fats, fat soluble vitamins (A, D, E & K), minerals (calcium & phosphorus) and a lot more.
In the Ayurvedic tradition ghee is regarded as a promoter of health, vitality and longevity. Ghee is great for all kinds of cooking (roasting, baking, frying, sautéing) and is prized by chefs and Ayurveda practitioners alike. Its high smoke point (252°C) makes it a healthy fat for cooking. Ghee is the ultimate foundation to a delicious and nutritious meal.
